PRODUCTION
• Produce the bread in the correct quantities and of the correct type to our shops in accordance with the daily production sheet.
• You will need to be able to MIX, SHAPE, BAKE
• Ensure that the correct processes are followed when producing products.
• Communicate with the Bakery Operations Manager if any problems exist or are anticipated with the production process.
QUALITY
• Ensure the quality of all products is never compromised.
• Products should be consistent in their overall appearance, colour, size, finish, weight and taste.
• Any products that are below quality should not leave the bakery unless with the agreement of the Bakery Operations Manager
INGREDIENT USAGE
• Ensure that ingredients are not wasted, and the correct amounts are used for each yield.
• Ensure that ingredients are kept fresh and in hygienic conditions.
• Ensure that ingredients are used in correct rotation.
HYGIENE
• Ensure bakery areas are clean, tidy and hygienic.
• Ensure all machinery is kept clean and in good working order reporting any urgent repairs to the bakery manager.
• Ensure all the cleaning jobs are done regularly as directed by your bakery manager.
COMMUNICATION
• Communicate any areas of difficulty, problems or suggestions to the Bakery Operations Manager, as you think appropriate.
GENERAL ATTITUDE AND BEHAVIOUR
• You are expected to behave in a responsible; conscientious; committed; co-operative; enthusiastic; cheerful; helpful; professional and proactive way.
• Always think ‘how could we do this better?’ for example, efficiency, recipes, ordering, procedures, team working, morale.
• Take pride in the products you make and the goods that leave your bakery.
REQUIREMENTS
As an Artisan Baker, you will be on a flexible day and night rota Sunday to Saturday, days and times by agreement where weekend work will be expected on occasion.
• Experience is ESSENTIAL.
• A good knowledge of food hygiene and standards is required.
• Knowledge of Bakery production is an advantage.
• Be able to hand mould
• Have an understanding of Sourdough production
