Purpose of the job
Support the Chef Manager to deliver the contracted meal service and manage the kitchen and staff of the particular contract in line with legislation, the Business Plan agreed with the Client and the Policies and Procedures of HCL. To provide emergency catering and meals for transporting to other sites, as required.

MAIN AREAS OF RESPONSIBILTY
1. To prepare, cook and serve food at breakfast, break times and lunch in accordance with the Service Level Agreement with the Client and with Nutritional Standards. Support the Chef Manager in the delivery of any special dietary, emergency and function catering as required.
2. Deputise for the Chef Manager in their absence and ensure the Unit runs to the required HCL standards.
3. Manage specific areas of the operation of the kitchen as directed by the Chef Manager. Where appropriate agree and implement priorities for action.
4. Maintain an up to date understanding of the Government’s School Food Standards and the make-up of dishes so that this can be communicated to the customers and encourage them to make healthy choices.
5. Deputise for the Chef Manager in implementing the operational management of HCL’s Food Safety Management System (FSMS) to provide a safe and healthy environment for customers and staff in the Unit. Understand and work within guidelines of HCL’s Health & Safety Policy. Support the Chef Manager in setting and monitoring standards and compliance with HCL’s Policies and Procedures, maintaining audit trail.
6. Assist in managing and developing the Unit staff to ensure all are motivated and developed to their full potential. This will include appropriate on-the-job training and induction.
7. Assist the Chef Manager to deliver the Business Plan for the contract and work within the set financial targets and maintain robust audit trail documentation. Handle cash accurately and ensure all monies are properly accounted for. Work with Smart Card and Biometric systems if required.
8. Work with the Chef Manager to effectively promote the service to drive sales and improve take up.
The duties and responsibilities listed above describe the post as it is at present. The post holder is expected to accept any reasonable alterations that may from time to time be necessary.

PERSON SPECIFICATION
  • As a self-motivated individual, you will have excellent communication skills as well as being able to demonstrate the ability to work effectively as part of a team.
  • It is essential that you have a strong understanding of the importance of Health and Safety as well as high standards of hygiene and a neat and tidy appearance.
  • You will be willing to be fully involved role in providing an excellent service to the schools, including attending on the job training if necessary. You will be confident in dealing with monies whilst being able to maintain accurate records if required.
  • The ability to communicate fluently with customers in accurate spoken and written English is essential for the post.
