With over 100,000 pieces of cake sold at Heligan last year, the Bakery is an integral part of our Hospitality operation. Alongside Heligan Kitchen, we have five other outlets across site that serve a variety of food and drink to over 350,000 visitors per year. With the addition of weddings, events and 7 course tasting menus called Lost Suppers, this is a varied role with high expectations.
There’s only 157 yards from kitchen garden to plate at Heligan. Our 2-acre productive garden produces 4.5 tonnes of fruit and vegetables each year and it forms the heart of our menu. Heligan Kitchen offers flavours inspired by the seasons so you can enjoy a taste of our heritage. If there’s a hungry gap between crops, we support our local suppliers and producers.
Responsibilities
- Assist in dessert preparation and collaborate with the Head Baker and Head Chef.
- Working with our Garden and Estate team to design desserts and cakes that reflect seasonal produce from our kitchen garden and surrounding estate. During the year the garden team deliver great items such as pineapples and kiwi’s grown in our garden and jungle, so these ingredients are a must for showcasing in desserts and cakes.
- Spending time in the gardens discovering our produce and heritage varieties in each season.
- Help in the design, testing, and implementation of the dessert and cake menu.
- Prepare a wide variety of goods such as cakes, pastries, bread and desserts for our restaurant and all outlets across site.
- Decorate pastries creatively making use of garden flowers and foliage, so that they are appealing to the visitors.
- Offer suggestions and creative ideas for key events throughout the year including Christmas, Mother’s Day, Easter, Wild Week, Summer and Harvest.
- Offer suggestions and produce high quality desserts for weddings, events and Lost Suppers.
- Spending time in other outlets to understand their operation, including Stewards House, BBQ, Takeaway, Play & Graze and Horsebox.
- Oversee and supervise Bakery team. Train, guide and motivate.
- Assist with inventory, ordering, supplier relationships, and management of supplies.
- Bakery is in good, clean, and hygienic condition, following guidelines and completing documentation.
- Monitor and maintain the kitchen equipment, and arrange repairs and service as needed via the Head Chef.
- Keep work and food prep stations clean and comply with food safety standards which are of the highest across site.
- Keep abreast with the latest food and industry trends.
Requirements
- Minimum of 1 year’s previous experience as a Baker/Pastry Chef.
- Food hygiene certificate. Strong knowledge of Food hygiene and safety regulations.
- Strong passion for the art of food design.
- High levels of attention to detail and creativity.
- Applicable knowledge of baking with ingredient limitations (pastries that are gluten free, sugarless etc.)
- Ability to communicate with customers and other staff members.
- Strong communication skills, both written and verbal.
- Good interpersonal skills.
- Physically able to be on your feet for long periods of time.
- Willing to work early mornings, evenings, weekends, holidays as needed.
- Ability to multitask and excellent time management skills.
- Ability to use kitchen equipment such as dishwashers, hotplates, cookers, etc.
