Brasserie Manager

Ashdown Park Hotel & Country Club are seeking an effective and charismatic leader to manage our Forest Brasserie which is based in the Country Club.

The Forest Brasserie provides a casual dining experience for hotel guests and non-resident diners, with a focus on high quality, locally sourced and sustainable produce and beverages. We are looking for an experienced manager to oversee the service and sales performance of the restaurant. With previous experience in a restaurant environment, you will be as comfortable pitching in with service as you are setting rotas and delivering training. You will have finely honed sales skills, which will promote the financial performance of the Brasserie, whilst maintaining exceptional levels of service. An all rounder with a welcoming personality, able to put customers at ease and ensure a memorable dining experience from the moment they walk through the door.

Key responsibilities

• The day to day operation of the Brasserie Restaurant operation 
• Maximise food and beverage sales at all times
• Management of the department's diary ensuring maximum covers at peak periods
• Stock control and stock taking
• Staff scheduling in line with the business
• Drive sales using incentives and promotions to compliment the  experience
• Training and development of the brasserie team to deliver sales led and guest satisfaction culture.
• To be an exceptional and professional ambassador for Ashdown Park Hotel & Country Club hotel and the wider Elite Hotels group.

Key Skills:

• Management of staff including recruitment and training of new starters
• The ability to lead by example and inspire your team
• Sales experience within a Food & Beverage setting
• Stock control and stock taking
• Staff scheduling in line with business levels  
• Drive sales using incentives and promotions to compliment the Brasserie experience
• Able to remain calm under pressure
