Food & Beverage at The Carnegie Club
As one of the largest departments at the Club, the Food & Beverage team are a friendly, enthusiastic bunch of all ages and levels of experience, from both the local area and further afield, who provide our members and guests will the genuine, heartfelt service that makes Skibo one of the world's best clubs.
Working across the estate, this dynamic team provides FOOD AND drinks service in a variety of locations. From breakfast, afternoon tea and dinner in the castle to lunch and evening dining at the golf clubhouse, our butlers may also be asked to provide refreshments at, for example, the clay shooting range, on Dornoch beach, or up on the moorland to the north of the estate. Every day is different!
At The Carnegie Club, we recognise that a happy team equals happy guests. Therefore, there are no split shifts so you can enjoy a healthy work/life balance. We're also recruiting night staff, to allow those on our late shift to head home.

About the roles
Restaurant Supervisors
Our Restaurant Supervisors ensure the smooth running of service to our members and guests throughout each shift. Leading by example and ensuring standards are kept high, you'll develop team training, look after stock requisitions, oversee deliveries, ensure professional menu presentation and communicate with other departments to ensure members and guests receive the best service possible. Ideally, you'll have experience in FOOD AND wine pairing too.
Senior Waiting Staff
From preparing dining rooms for service, offering guidance to guests picking a suitable wine to accompany their meal, supporting fellow waiting team colleagues during meal times and training new team members, as one of our 'Rank 3 Butlers' you'll be a key lead member of our F&B team.
Waiting Staff
Our waiting staff are central to delivering the Skibo experience to our guests. From service of breakfast, lunch, afternoon tea and dinner, to providing coffees, pouring Champagne and setting up picnics, you'll develop your communication and interpersonal skills, as well as learning about food, wines and whiskies along the way.
Bar Team / Mixologists
With our own Skibo Highland whisky, as well as our award-winning Glasshouse gin, distilled with botanicals from the estate, your bar and mixology skills will be put to good use in our stunning Clubhouse bar, with its glass walls overlooking the Dornoch Firth. From old favourites to creating modern Skibo classics, you'll be at the centre of our buzzing lunch service and relaxed brasserie-style evenings.
Baristas
Coffee creation is somewhat of an art, with new and innovative recipes, mixes and flavours developing all the time. We therefore seek skilled baristas to complement our bar service to deliver top-quality coffees, teas and hot drinks to our members and guests. Even if you have minimal experience, a passion for coffee, being part of a team and taking pride in your work are the essential skills for this role.
Runners / F&B Porters
Our waiting team are ably supported by a band of enthusiastic, hardworking runners, who provide assistance in all back-of-house areas, such as maintaining order in our cellars with good administrative skills, receiving deliveries, practicing good rotation and manual handling of stock. They also help with front of house presentation including glass cleaning and dining room set-up. They carry food from the kitchens to the dining areas for the waiting team to serve, and ensure the department is kept hygienically clean at all times. We can't do without them!
Night Team
A new role within the department, we seek pro-active, trustworthy individuals to support the department after-hours. From late drinks service during special events, to setting up dining rooms for breakfast, you'll ensure our food service is set up and ready to go for another day. Working alongside the reception night team, you'll help members and guests with any requests they may have through the night and provide coffees etc for early departures.

Gratuities and the Service Charge
Gratuities (tips) and service charge (an additional charge added to room rates and other services at the Club that is passed directly to staff) are paid to all employees on a pro-rata basis regardless of their role.
It is estimated that in 2024, full-time staff can expect to receive around £4,000 in addition to their annual salary.
