We would love to hear from you, if you're even a little bit interested or qualified. Our production kitchen is a 5 minute walk from Wimbledon Park tube and we have a large team of talented chefs and kitchen assistants.


You will be responsible for ensuring the efficient and effective operation of our central production kitchen, maintaining high standards of food quality, safety, and hygiene, and managing a team of kitchen staff to achieve production targets.

Job Purpose

Responsible for all Central Production Unit activities to include developing pricing strategy, product range and development strategy.

Responsible for ensuring the Central Production Unit meets and adheres to all legal requirements.

Responsible for maximising opportunities for profit, generating revenue, creating sustainable growth and meeting budgets.

Responsible for maintaining highest standards and ensuring Bayley & Sage quality expectations are met.

Responsibilities

1. Oversee the day-to-day operations of the central production kitchen, including food preparation, cooking, packaging, and storage.

2. Develop and implement production schedules and workflows to ensure timely delivery of food products to our various outlets.

3. Monitor inventory levels of ingredients and supplies, and coordinate with suppliers to ensure timely replenishment.

4. Maintain strict adherence to food safety and sanitation standards, including HACCP guidelines, FSMS and Risk Assessments to ensure compliance with all relevant regulations.

5. Train and supervise kitchen staff, including chefs, cooks, and assistants, to ensure consistent quality and productivity.

6. Implement quality control measures to uphold the highest standards of food quality and presentation.

7. Identify opportunities for process improvement and cost optimization, and implement changes to enhance efficiency and profitability.

8. Collaborate with other departments, such as procurement, logistics, and quality assurance, to coordinate activities and resolve issues.

9. Conduct regular inspections of equipment and facilities, and coordinate maintenance and repairs as needed.

10. Prepare reports on production performance, inventory levels, and other key metrics, and present findings to management.

11. Develop and implement standard operating procedures (SOPs) for all production processes, including recipe standardization, portion control, and cooking methods.

12. Conduct regular training sessions for kitchen staff on SOPs, new techniques, and equipment operation to ensure consistent execution and adherence to quality standards.

13. Monitor and analyse production data, including yield rates, waste levels, and labour efficiency, to identify trends and areas for improvement.

14. Lead continuous improvement initiatives to streamline workflows, reduce waste, and increase productivity while maintaining quality standards.

15. Collaborate with the team to develop new menu items and recipes, taking into account cost-effectiveness, seasonal availability, and customer preferences.

16. Coordinate with the logistics team to plan and optimise delivery schedules, ensuring timely distribution of finished products to retail locations or customers.

17. Manage relationships with external suppliers and vendors, negotiate contracts, and evaluate performance to ensure quality and cost-effectiveness.

18. Respond promptly to customer feedback and complaints regarding product quality or delivery issues, and take appropriate corrective actions.

19. Stay updated on industry trends, emerging technologies, and best practices in Food Production and incorporate relevant innovations into operations.

20. Foster a positive work culture that emphasizes teamwork, professionalism, and employee engagement, promoting a safe and inclusive environment for all team members.

Requirements

1. Bachelor's degree in a related field preferred.

2. Proven experience in Food Production management, with a minimum of 5 years in a similar role.

3. Strong knowledge of food safety standards, sanitation practices, and HACCP principles.

4. Excellent leadership and communication skills, with the ability to motivate and manage a diverse team.

5. Highly organized and detail-oriented, with the ability to multitask and prioritise in a fast-paced environment.

6. Proficient computer skills, including experience with MS Office and Food Production software.

7. Flexibility to work evenings, weekends, and holidays if required.
