Job description

The Bristol Loaf is an award-winning, Soil Association certified, artisan bakery. Since we opened our doors in 2017, we have doubled in size, but our passion remains the same: to create the tastiest breads, pastries and cakes using the best quality ingredients. We bake breads daily for our 3 sites and a collection of independent delis and restaurants across Bristol.

While staying true to our core values, using only traditional, slow fermentation methods and a focus on locally grown heritage grains. We have also just received delivery of our brand new New American Stone mill so we will be delving headlong into the world of freshly milled, regenerativley farmed wheat.

To make this possible need more hands on deck, we have a new position of Bread Baker to work alongside our experienced sourdough team based in our Bedminster store. This position would suit a trainee or an experienced baker looking to work within a larger team and handle a larger volume of dough. What you will be doing:.

  • Learning all things traditional sourdough bread alongside a settled and dedicated team
  • fulfilling the shop & wholesale bread par levels according to the recipes and coordination with the bread team
  • scaling, mixing and shaping dough by hand
  • Manning the oven
  • contributing to product development procedures with a good creative attitude
  • you may be asked to assist in ordering procedures and the overall smooth running of the working day
  • Learning to mill fresh grains

What you will be needing, the must haves:

  • A real passion for baking and an interest in the growing systems that bring us our foods
  • An interest on traditional and modern bread baking techniques
  • An exquisite eye for detail
  • A real “what-can-I-do-for-the-team”-attitude
  • Strong organisational and time management skills
  • An ability to work in a tidy and methodical way to allow for the efficiency needed to meet the baking schedule
  • Desire to grow and adapt within an evolving start-up business
  • An impressive communicator who takes pride in doing your best in any endeavour
  • Knowledge of health and safety procedures

Bonus points (but not a necessity):

  • A knowledge about traditional and rare grains/seeds
  • Pastry making experience
  • An interest in nutrition
