Site Mess Manager - Clive Barracks Junior Ranks Mess Catering
  • £23,017.20 per annum
  • 35 hours per week
We're currently recruiting a dedicated Site Mess Manager to help ensure the smooth running of the operations in Defence on a full time basis, contracted to 35 hours per week.Overall Purpose of the Role To be responsible for the management and delivery of all Soft FM services in a within the mess or messes, you are employed to manage in line with contractual obligations and company expectations, including but not limited to health & safety, accommodation management, food & beverage provision (inclusive of mess bars), general cleaning and housekeeping, function and events management and full budget and accounting responsibility.   • Manage, monitor and update all appropriate food safety and health and safety paperwork to the required standards imposed 
  • Ensure that all appropriate HSE Information, instruction, training and supervision is provided to all employees within your control to enable them to carry out their work safely and effectively
  • Ensure all HSE incidents/ near misses are reported and investigated within the set timeframe in line with company policy and procedures
  • Lead and manage the delivery of all company profit protection procedures within the mess and share best practice with other colleagues
  • Manage and drive the completion of all compulsory online training with all team members 
  • Ensure that uniform standards are adhered to at all times and that all team members are dressed appropriately
  • Manage the process of all accommodation bookings via the nominated systems and accommodation booking clerks, ensuring that all requests are actioned in line with service requirements
  • Provide accurate costings for all functional activity to the client in a timely manner
  • Plan, organise and deliver all service requirements to the specification of the client whilst maintaining contractual guidelines
  • Ensure that all relevant paperwork is obtained and completed as laid down by the contractual/business guidelines 
  • Ensure that facility is clean, free from dust/debris and presentable at all times in all areas
  • Produce a monthly/4 weekly roster whilst adhering to the labour budget assigned
  • Ensure accurate mess billing/invoicing is provided to the client within the bounds of the contractual expectations
  • Justify all overtime in advance using correct format and supply to line Manager for approval
  • Verify and sign off weekly timesheets ensuring that all attendance and absences are entered correctly onto the in house reporting system (Nexus)
  • Ensure that client invoicing is processed within the correct trading period for all services/functions/events
  • Ensure purchasing compliancy using only Company authorised vendors
  • Control all stock levels within the mess, ensuring accurate weekly checks are processed through Nexus
  • Manage the training, discipline, morale and welfare of all team members
  • Conduct investigatory, disciplinary and grievance hearings in line with Compass Policy & Procedures
  • Manage all labour costs effectively and within the designated budget
  • Conduct regular team meetings and provide essential business information/updates 
  • Conduct and manage annual appraisals, 1:1 performance reviews and mid-term reviews
  • Liaise with the PMC/Mess Secretary on a continual basis and attend messing meetings when required to do so
  • Proactively develop and continually improve all client relationships
  • Maintain a record of all breakages and repairs required
  • Ensure production of all accurate mess bills within the set timeframe, and manage all debtors in line with mess protocols
  • Complete the weekly finance paperwork and enter onto Nexus accurately, forecast events, costings and supply to the General Manager at the beginning of each Wednesday 
  • Your duties will at times require you to work in areas other than your normal place of employment
  • To be flexible and assist with other reasonable duties as and when required
  • As per duty manager roster you are required to undertake weekend duty manager
  • Ensure all MPRO5 audits are conducted as per business direction
Essential Requirements
  • Proven experience in managing successful teams in a similar environment 
  • Basic Food Hygiene certificate 
  • Experience of leading and managing a small to medium team of people 
  • Excellent financial acumen 
  • I.T literate 
  • Proven experience in mess accounting/billing procedures
Desirable Requirements:
  • Experience in a similar role 
  • Good knowledge of food production methods and procedures 
  • Excellent communication skills 
  • Self-motivated and ability to adapt to a changing environment 
  • Good knowledge of mess accounts systems and billing processes
  • NVQ Level 1 & 2 or City & Guilds 706/1 and 2 
  • Minimum 2 years catering experience 
  • Good knowledge of Food Safety 
Personal Specification:
  • Good Chef /catering skills an advantage 
  • Good knowledge and experience of working with food and beverage
  • People Management
