Job description

You will make Biltong from Wild Venison, help with recipe development, cut whole deer carcasses & sell direct to the public at our shop, farmers markets and festivals.

Vacancy description

Duties will include:

  • Breaking down venison haunches, cutting excellent steaks
  • Spicing, curing and hanging the biltong steaks to dry
  • Packaging & selling finished biltong and helping with other parts of the business process
  • Potential to help with sales, either on site or at markets & festivals.

Hours

40 hours per week, flexible working possible. (hours may vary based on seasonality). Most hours to be Monday-Friday, but also the opportunity to join the sales force at weekends, at Farmers Markets and Festivals

Things to consider

  • Forest Row is on 3 regular bus routes (270, 291 & 261).

  • Training is provided by Plumpton College, where you will attend college in person once every two weeks. There are college coaches that you are able to utilise to get you to and from Plumpton College.

Training to be provided

The final certification will be for L2 Butchery.

The apprentice will learn:

  • Knife skills - including cutting, boning, trimming and mincing of meat
  • Health and safety practices, food safety and hygiene and key legislation
  • Using butchery tools and machinery – including mincing, sausage making, bacon curing, vacuum packing
  • Cutting whole dear carcasses, in season, from nose to tail.
  • Business profitability, maximising productivity, efficiency and customer care
  • Team work and customer care skills
  • Specialist retail shop or processing plant butchery skills

Qualifications Awarded

  • Butchery Level 2 Apprenticeship Certificate
  • Level 2 award in food safety
  • Level 2 award in health and safety
  • Level 2 award in knife skills
  • Level 1 in maths and English (if applicable)
