Overview:
This role is responsible for planning & delivering the premium catering operation across our private members restaurants, lounges and private dining (‘On Four’) on matchdays as well as Conference and Events (C&E) business on non-matchdays.
Comprising of 500 covers, 5 dining areas and 4 private suites, you will ensure that all aspects of The On Four Collection are delivered in a quality, customer focused manor combining attention to detail and uncompromising demand for excellence whilst striving to exceed guest expectations.
Knowledgeable with both food and beverage is essential. Eager to share and absorb knowledge as well as being the face of the operation and point of contact for restaurant service. The specific remit of this role covers:
Take responsibility for the delivery of service excellence- Own and support with the delivery of variable front-line recruitment and training.
- Continually improve guest experience by working with your line manager and THFC client in developing a program of continuous improvement creating & implementing action plans.
- Ensure that all relevant reporting requirements including labour and stock takes are prepared and submitted as per agreed Levy UK schedule whilst following audit protocol.
- Ensure all match day co-ordination pre and post event is collated within the company format. Bespoke requests are documented, pre-ordered and in-situ in advance or as requested by individual guest. All event day paperwork is prepared in advance and prior to each event, distributed to the variable management team. Event detail is shared and communicated during your individual match day briefs. Feedback and comments are collated post event and responded to in a timely manner. Shared with and escalated to your line manager.
- Source, recruit, train, develop and maintain a core restaurant team of variable front line managers and service staff. The individuals highlighted become Levy UK @THFC service ambassadors. They are responsible for the detailed set up, event day food service delivery and post event collation, reconciliation, billing and breakdown.
- Build relationships with individual “on four” premium guests. Understand their individual service expectations, ensuring an all-inclusive bespoke food service program is delivered and understood by front line variable match day service staff.

Profit Protection Supporting with line manager to lead your teams be demonstrating strong knowledge and implementation of profit protection procedures including but not limited to stock control and payment and billing controls
Person Specification
You are traditionally trained with in fine dining restaurant establishments. Your appreciation for good food and fine wines shines through. Event delivery experience is desirable.
