Pembroke College, a vibrant and esteemed academic institution, is seeking an experienced and dynamic individual to join as a Chef de Partie. This is an exciting opportunity to play a vital role as part of a supportive and highly professional team focused on delivering exceptional service to the College's students, Fellows, staff and guests.
Overview of the Role
Responsibilities include the preparation of dishes for our community as well as for private functions and events. The role holder is expected to maintain high-quality standards, work effectively with the rest of the kitchen team and produce consistently high-quality dishes with a personal touch.
Salary: c. GBP28,000 per annum depending on experience. A 40-hour week is worked in straight shifts across five days each week.
We are looking for an individual with a Level 2/3 Professional Cookery NVQ Diploma (or equivalent) and experience in the kitchen. The role supervises and coordinates kitchen staff during service periods. The Chef de Partie reports to the Head Chef, Deputy Head Chef and the Sous Chefs. The kitchen is currently supporting three apprentices. We offer good benefits and training to help you progress to the next level.
Main Responsibilities include:
- Manage the preparation of dishes for staff, students, members of the SCR, private functions and private events. This includes lunches, dinners and special events.
- Ensure consistent quality and standards for all dishes produced for the College.
- Keep the kitchen clean, organised and stocked with necessary ingredients and equipment.
- Keep HACCP paperwork up to date.
- Follow recipes and standard operating procedures but with individual input.
- Maintain proper sanitation, food handling and safety standards in the kitchen.
- Communicate with the Head Chef, Deputy Head Chef and Sous Chefs to ensure food preparation is completed to standard.
- Supervise and coordinate with kitchen staff to keep the kitchen running efficiently in preparation for service periods.
