Job description

Our client, a fast growing hospitality business, is looking to appoint a Food Development Coordinator for their Head Office / Development Kitchen based in Bristol. Joining an ambitious and passionate team, the successful candidate will gather and manage information from the creative stage, turning concepts into tangible recipes active across multiple restaurants. Comfortable with cooking in a professional kitchen, you’ll be a trusted source of knowledge and support for our chefs and operations teams.  

Reporting to the Head of Food, responsibilities for the role will include:
•    Researching food trends, both broadly and for specific ideas and scanning for inspiration in line with the brand direction and brief
•    Supporting the Development Chef with prep and cooking, especially for menu launches
•    Diarising key dates in menu launches and coordinate actions for the team
•    Coordinating and attending all Food Development cook offs, including diarising and taking concise minutes with clear action points and distributing these to attendees afterwards
•    Spending time in the kitchen with the Development Chef, collecting and managing information from them and suppliers as they develop, including costs, ingredients specs, recipe ingredients breakdowns, yields and methods.
•    Managing and sharing this information with wider teams to support the roll out of food information such as allergens, calories, supply chain, shelf life, finance, marketing, menu print, equipment development and more, highlighting any risks and solutions to the Head of Food for support.
•    Using internal systems to set up recipes and ingredients accurately including costings and menus, in conjunction with supply systems and finance.
•    Spending time in operations through weekly visits to restaurants in order to gain understanding of how a kitchen operates as well as its limitations and get insight and ideas from the teams.
•    Supporting food quality programmes with the commercial team, for both existing and new products.
•    Conducting step-by-step photography of recipes from start to finish alongside the Development Chef, ensuring recipe cards photos and methods arere clear for chefs and aligned to systems.
•    Building and maintaining the bank of recipe cards and other food guides for restaurant teams to effectively reproduce recipes at volume.
•    Leading proof reading of all menus and materials prior to printing to ensure accurate information shared with customers and teams.
•    Creating and coordinating companywide trials, menu training and menu launch communications including materials, auto-drops of ingredients and equipment, diarising, room bookings, circulating agendas and delivering relevant presentations.

Essential / Desirable skills and experience include:
•    Ideally experience of working in a multi-site hospitality business, however a food manufacturing background will also be considered providing you have hands on kitchen experience. 
•    Hands on kitchen experience and / or cooking qualification
•    Worked alongside a combination of levels and departments such as operations team, chefs, HQ functions and directors.
•    Project management and data keeping.
•    Understanding of allergens management, costing, supply chain and till systems.
•    Loves food and is happy to share / discuss ideas openly
•    Positive and able to stay solution focussed on the face of changing priorities
•    Driven by learning, always looking to improve skills and knowledge to find solutions
•    Self starter, always looking for ways to improve and exceed expectations
•    Happy to get hands on and spend time in kitchens, both development and restaurants
•    Software skills: Excel, Word, PowerPoint, Adobe

The working hours of this role are Monday to Friday, office hours, with flexibility to work occasional evenings and stay aways. The salary is £30k - £35k per annum, plus bonus & an excellent benefit package
