To assist the Head Chef and sous chef in providing a high standard of catering to exceed guest expectations within the company's financial criteria. To ensure that all Hygiene and Health & Safety standards requirements are met.
To co-ordinate sections and able to run a kitchen in the absence of the Sous Chef and Head Chef.
To order and take deliveries and store food items as directed by the Head Chef To complete temperature checks and other paperwork as required
Appropriate use of probe to ensure that food is safe before serving to the Guest.
To record all waste as required. To clean work area as per cleaning schedule To ensure food stock is stored and used in rotation.
To follow proper segregation of Ready-to-Eat (RTE) and Not Ready-to-Eat (NTRE) food.
To have full working knowledge of all food products served to specification. To always adhere to Uniform and Personal Hygiene standards.
To be responsible for the section you are assigned and to ensure that the Prep for that section is completed before service and refilled by the end of the shift.
To learn all the Food spec and always use the tools provided for the portion control.

To adhere to all menus and portion control as required. Be thorough in the Allergen policy, report immediately to BOH manager on any special diet request. Follow – Make, Take, Serve policy.
Health & Safety: The Company operates a Health & Safety Policy. This is a legal requirement to ensure the Health, Safety and Welfare of all employees, customers and guests and visitors whilst on company premises. To ensure that you complete the company Health & Safety training programme, “Your Safety Matters” and follow guidelines as set. To work in a safe manner, with due diligence towards yourself, colleagues, customers, and general public at all times. You must report accidents, incidents and hazards regarding Health & Safety to your Manager immediately. To work together with your fellow team members to produce standards of excellence within your department and aiming to exceed expectations.
