Job description

GLL is looking for a qualified Head of Catering and Cook to join our team at Blue Peris Mountain Centre, based in Snowdonia North Wales. As a Head of Catering and Cook your duties will include planning menus and undertaking preparation, cooking and serving of food in accordance with environmental health standards, to provide healthy and nutritious balanced meals and snacks for our customers.

What you’ll do:

  • Manage the catering rota to ensure all catering is covered for all activity programmes.
  • Manage and mentor staff
  • Be responsible for, oversee and support the operation of the Centre’s souvenir shop.
  • To ensure all food and sundries are ordered in a timely manner, and that stocks are monitored.
  • Maintain overview of expenditure for catering and housekeeping
  • Monitor the quality of the produce, menus and service provided
  • Advise all catering staff in regard to centre polices
  • Oversee and manage catering and domestic requirements related to any off site's courses
  • Prepare and produce meals and menus
  • Ensure menus suit all customers regards diets
  • Ensure logistics requirements for each course are in place as required.
  • Oversee and keep track of all food monitoring and other related kitchen compliance
  • Receive, store and rotate food deliveries
  • Supporting the domestic team operating in the serving area (not table service but from the counter)
  • Perform kitchen set-up and close-down process
  • Alongside domestic staff assist with kitchen deep cleaning as and when required
  • You will be require to work shifts on a rota to meet the requirements of the catering service.

What you need:

  • You will already be experienced in catering / hospitality and with a working knowledge of legislation relating to catering venues
  • You'll understand everything from event catering to day-to-day kitchen work.
  • You'll ideally have a Minimum level 2 /3 qualification.
  • It is essential that you have a Basic Food Hygiene certificate.
  • With front-of-house experience, you'll be a great people-person, inspiring your colleagues as well as welcoming our customer
  • Experience of managing a staff tea
  • Work as part of the team to ensure the smooth operation of the centre
  • Provide excellent customer care and have good multi-tasking skill
  • Follow all Normal & Emergency Operating Procedures as well as adhering to relevant product manuals
  • Fully participate in and engage in the training through centre –based training and on-going assessment on performance
