JOB PURPOSE:
The primary objective of the role is to provide a quality, market leading and customer orientated service throughout the Retail and Beverage operation at Twickenham Stadium, while maintaining a positive working environment.
ACCOUNTABILITIES:
KEY RESPONSIBILITIES
- All Event mobilisation and set up
- Involvement in season budgeting
- Forecast of revenue and costs for events
- Oversee technology infrastructure and equipment
- Concessions Partners relationship
- RFU Sponsors / Partners relationships
- Benchmarking
- Purchasing and product sourcing
- New projects and maintenance
- Payroll and rota’s
- Training
- Ensure that all areas of Retail and Beverage operation are executed with the optimum level of staff, product, equipment and services to ensure the highest possible standards whilst effectively controlling costs.
- Through strong leadership, achieve anticipated revenues and profits in the Retail operation, while embracing “Heartfelt Hospitality”, living the TEL strategic plan and exceed guest expectations.
- Manage all day to day aspects of the beverage catering scheduled for events through the appointed management structure.
- Monitor and improve the operation standards in all Retail and Beverage areas.
- Management planning ensuring a scheduled working duty management presence on all operating days, including major C&E events.
- Recommend to the Director of Catering Services improvements in service, product lines, operational procedures and staffing to ensure higher service standards and/or cost savings. Where applicable cascades similar proposals to the C&E operation.
- Maintain day to day contact with RFU client / management to enable the closest possible working relationship, whilst being aware of any situation that might impinge upon TEL’s commercial interest.
- In conjunction with the Health and Safety department, undertake regular health and safety audits of the operation and direct corrective action if required. Ensure implementation of the company’s food safety policy and procedures.
- Ensure signage is correct and presentable. Deal with companies to develop/change/correct signage.
- Forecast product requirements for Suppliers, using appropriate data and event trends.
- Place orders with relevant suppliers, in line with company policies, and ensure all relevant processes are completed.
- Implement staff planners, to effectively set up and clear down areas of responsibility in line with business needs and in line with set targets.
- Demonstrate knowledge of food And Beverage Operations with a focus on innovation, standards and market awareness.
- Ensure feedback from event days is consolidated and communicated to all relevant parties, ensuring action required is completed.
- Be an ambassador for Twickenham Experience Ltd at all times.
- Demonstrate sound financial knowledge of Retail and Beverage operation.
- Investigate revenue short falls and cost over spends relating to the financial results for your area and take necessary action.
- Be able to provide information relating to cost of sales and sales mixes, analysis etc.
- Demonstrate awareness of financial implications of all sales and commitments made to client.
- Ensure all stock takes are completed to deadlines.
- Work within all budget restrictions.
