The Patron Saint, located on the outskirts of Bruntsfield in Edinburgh, has been taken over by the team behind The Ensign Ewart (one of Edinburgh busiest whisky bars) and we are looking for an experienced Head Chef to join our new team and help get this fledgling business off the ground!
We plan to specialise in sourdough pizzas, using ingredients from local businesses such as IJ Mellis and East Coast Cured for toppings, alongside a selection of small plates, however we are open to any and all suggestions! We love Scottish food and drink and want to celebrate it any way we can.
The role would suit an experienced Head Chef looking for a change of pace, or a Sous Chef or equivalent looking to take the next step in their career.

The main duties of the role include:
- Ensuring the smooth operation of the food service and preparation within the kitchen.
- Hiring, Training & Development of the kitchen team.
- Working with management to ensure rotas are within budget, while ensuring smooth running of the shift.
- Monitoring of wastage to ensure accurate GP%
- Stock Rotation & Ordering to ensure minimum wastage but also having the correct par levels to ensure a customer is not left wanting
- The maintenance of a Cook-safe food safety system
- Documentation & Safe preparation of Allergens within the kitchen
Previous similar experience in the following areas is preferable, but full training will be provided to fill in any gaps!
- Running of a busy service in a fast paced kitchen.
- Ability to work to a high standard on your own, or as part of a small team.
- Experience in food prep/cooking to create consistent, quality food.
- Costing of Menus, keeping to KPIs.
- Ordering, Par Levels & Stock Rotation.
- All relevant food safety record keeping
- Adherence to allergen guidelines.
- Menu development.
Level 3 Food Hygiene or equivalent is also desirable but not essential, and can be provided for the right candidate.
