In the late 60's the building was taken over by fashion powerhouse Biba and was the pulse of Swinging London. 100 ft high above Kensington High Street, set across 3 floors with over an acre of gardens, The Roof Gardens will be a next generation members club that is future-facing, committed to innovation and community, to discovery and to delight. The club will open in Spring/Summer 2024 as a world-leading members’ club affording its community beautiful gardens, bars, restaurants and events spaces alongside a visionary cultural and music programme.
The Role
We have a fantastic opportunity for a Senior Sous Pastry Chef this position would suit a Senior Sous Chef/Head Chef level looking for their next big step or for an exciting new challenge.
You will be leading a small brigade of chefs as part of the culinary team and developing new and exciting dishes for our various events spaces and our stunning Spanish Garden, with Levantine inspired informal mezze and wood grilled cooking.

Key Responsibilities:
- Food Preparation: Control and direct the food preparation process, deliver food to the expected high standards of the business within set time frames.
- Kitchen Operations: Take overall responsibility for daily operations in the kitchen. Manage your team and work closely with Chefs of all levels.
- Procurement: Determine food inventory needs, stock, and order and liaise with purchasing companies for food orders. Maintain or raise profit margins on food.
- Team Development: Accurate scheduling of your team to reflect business levels and ensure working within budget. Training and managing your team in line with the company's expected culture.
- Menu Development: Produce menus, concepts, and new dishes relevant to your area, creating accurate recipes, menus, and costings. Maintain the budgeted food cost and actively seek ways to improve profitability.
Skills & Requirements
- NVQ Level 3 or Culinary Arts Degree
- Level 2 Food Safety and Health & Safety Award
- Minimum 2 years' experience as Sous Chef or higher
- Ideally, 5-star hotel or Rosette restaurant experience
- Previous team management experience (5+ team members)
- Strong knowledge of bakery and banqueting
- Awareness of manual handling and COSHH regulations
- Competent English communication skills
- Excellent knowledge across all kitchen sections
- Ability to produce high-quality food
- Effective oral communication and team management skills
- Strong attention to detail and numeracy
- Enthusiasm for personal and team development
- Adaptability and openness to new ideas
- Ability to work independently and deliver quality results
- Positive and approachable demeanour with strong team player qualities
