Key Responsibilities of Senior Sous chef
- Oversee the daily kitchen operation to ensure the smooth and consistent running of each shift
- Ensure food safety standars and allergens legislation is maintained at all times
- Engage and develop the team to reach their potential and aspirations
- To work with the team producing menus that demonstrate flair and commercial awareness taking into account current trends in the catering industry and meeting customer preferences.
- Ordering of stock and ensuring stock levels are at agreed levels in addition rotation apply in a systematic way
- Ensure all food purchases support the hotel’s environmental and sustainability ethos and credentials
- Deliveries are checked for quality, relevant delivery records maintained, and ensuring proper storage of goods
- Maintain the Kitchen’s target Gross Profit through the effective control of payroll, food costs, wastage and portion control
What We’re Looking For
- Proven expertise as a Senior Sous Chef or in a closely related position
- Expert knowledge of food safety regulations and practices
- Skilled at encouraging and leading teams for great service and teamwork
- Experienced in understanding the financial performance of a kitchen including profit and stock control
