Key Responsibilities of Senior Sous chef  

• Oversee the daily kitchen operation to ensure the smooth and consistent running of each shift
• Ensure food safety standars and allergens legislation is maintained at all times
• Engage and develop the team to reach their potential and aspirations
• To work with the team producing menus that demonstrate flair and commercial awareness taking into account current trends in the catering industry and meeting customer preferences. 
• Ordering of stock and ensuring stock levels are at agreed levels in addition rotation apply in a systematic way
• Ensure all food purchases support the hotel’s environmental and sustainability ethos and credentials  
• Deliveries are checked for quality, relevant delivery records maintained, and ensuring proper storage of goods
• Maintain the Kitchen’s target Gross Profit through the effective control of payroll, food costs, wastage and portion control

What We’re Looking For

• Proven expertise as a  Senior Sous Chef or in a closely related position
• Expert knowledge of food safety regulations and practices
• Skilled at encouraging and leading teams for great service and teamwork
• Experienced in understanding the financial performance of a kitchen including profit and stock control
