We’re set right at the heart of the Scottish Borders and offer a great place to relax, unwind and magically shut off from the pressures of modern life. We’ve been welcoming guests for well over 100 years but today is home to 132 bedrooms, 3 places to eat, 6 function spaces, leisure club, spa and oodles of outdoor space.
About the role
At The Hydro, the emphasis for food is on quality. We know that freshness and quality are important to our guests, so we work hard to include the best local produce and seasonal ingredients. Our chefs are flexible so you could be producing food for our Picnic Shop, Dining room and Lounge as well as busy functions: That means you’ll have a really varied workload. So, if you’re passionate about fresh produce, enjoy the buzz of a busy kitchen in a business that’s transforming, then this is perfect for you.
Do you have what it takes?
As Chef de Partie, you’ll motivate the commis chefs to prepare food for up to 120 people on busy days, as well as functions for up to 120. You’ll have an eye for quality, consistency and for portion control. You’ll build good relationships with the front of house team to make sure our guests get exactly what they want, quickly. A qualification in professional cookery would be great, and relevant industry experience at Chef de Partie level is essential. You’ll be flexible as hours of work are variable to meet the needs of the business.

Peebles Hydro
Another Hydro, but it’s not like Crieff…. Peebles Hydro has 132 bedrooms and like many of her rooms, is firmly focused on the outdoors and making the most of what’s on the doorstep. Kids activities might send them back a little muddy but they’ll love meeting our bees, hens and chickens and can even learn to build a proper woodland den. Hire bikes from us and take in a gentle cycle or race down the trails at Glentress. Opt for a potter along the High Street and getting familiar with locally produced food and drink.
