Job description

Our client is a world renowned Luxury Hotel operator. They are currently looking to recruit an Head Chef for their leading operation based in Aberdeenshire.

The Position:

Under the direction of the Executive Head Chef and Head of Operations, the Head Chef has responsibility for delivering five-star cooking and dining experiences across the estate facilities.

As a senior member of the culinary team, this role requires a high level of organisational skill and culinary ability.

With a proven track record in a senior role, this important and exciting role for a hands-on,creative chef.

The food offering includes breakfast, lunch, dinner, private hire, corporate hospitality and exclusive use or both formal and informal dining.

The role operates on a shift-based system including evening and weekend working in line with the seasonal needs of the business.

Key Duties -

Support and deliver the day-to-day food services on the estate

Deputise for Executive Head Chef as required

Contribute to training and leading the culinary team, ensuring excellent communications with the operational and sales team

Assist with preparation of personnel rotas

Assist in the design and development of menus and dining experiences in agreement with senior management

Order food and assist with cost control.

Monitor pricing and remain up-to-date on market activities and competitors

Ensure SOPs, portion control, plating and waste management records are maintained to maximise efficiencies and profitability

Ensure correct stock control procedures are adhered to, including appropriate storage and labelling

Work closely with the management team to develop menus, culinary opportunities and services

Ensure cleaning and hygiene standards are maintained to the highest level and detailed records are continually updated in compliance with the relevant licenses and authorities

Ensure safe use of all equipment and machinery in the kitchen and report any defects in machinery and equipment immediately

Any other duties required by management for the smooth operation of the business and delivery of five-star services

What we are looking for:

- Experience of leading a culinary team in a 4 or 5-star restaurant context

- Formal catering qualifications

- Culinary creativity, imagination and flair

- Passion for cooking and high level of presentation

- Excellent communication skills

- Ability to work under pressure and juggle competing priorities
