Job Overview:
We are excited to be recruiting for an enthusiastic and open minded Sous Chef who will assist the Head Chef in the effective running of the Hotel Kitchen in areas of profit management, stock, wastage control, hygiene, organization, food standards, observation, training and personnel within the Department. Also, to give the team continuous guidance and direction where necessary, in order to achieve consistency and high standards of performance and presentation. This is also a great opportunity to explore and develop a new and exciting concept that will enable you to challenge and enhance your culinary skills, whilst having fun along the way.
Your duties and responsibilities will include:
- To aid the Head Chef and to achieve the hotel’s budgeted food C.O.S. and systems to be in place to support the profitability of all food outlets.
- To supervise the Kitchen on a day-to-day basis, in the absence of the Head Chef, ensuring that the correct standards are in place and, if not, to redirect and control.
- To continually seek to develop and improve the image and reputation of the department through your personal efforts.
- To assist the Head Chef in the compilation of new menus and feed upwards production and menu ideas/feedback.
- To assist the Head Chef in the establishment and development of methods and standards.
- To assist in ensuring that the department complies fully with F&B audit standards.
- To assist in the day-to-day ordering of food in line with the UK purchasing guidelines.
- To ensure that the level of Kitchen hygiene is adhered to in line with recommendations from the food safety manual.
- To assist the Head Chef in compiling the weekly rota, to ensure the best use of resources and the smooth running of the Kitchen.
- To assist the Head Chef in the motivation and training of the staff.
- To inform Maintenance of all items in need of repair or replacement on an on-going basis to the system laid down.
- To take over and run a section, when necessary.
