Better Dairy is building the future of food by producing molecularly identical dairy without using any animals.

By utilizing a series of technologies, including precision fermentation, we are rebuilding dairy from the ground up. The Role
We are looking for a curious and dynamic New Product Development Intern to join our Food & Dairy Science team for an initial period of 4 months, with a potential for extension afterwards. In this role you will support a team which is responsible for the research, development and testing of various ingredients and flavour profiles in cheesemaking.
The successful candidate must be eager to learn and have a passion for food and sustainability.
Responsibilities
Formulation Development
- Collaborate with the Food & Dairy Science team to develop and optimise Standard Operating Procedures (SOPs) for various animal-free products in a lab-scale and pilot-scale setting
- Conduct research on ingredient functionality and its impact on product characteristics
- Assist in ingredient sourcing, evaluation, and selection based on scientific principles and product requirements
Sensory Science
- Prepare samples for sensory panel training and help coordinate training sessions
- Analyse sensory data and contribute to the interpretation of results to improve product quality
- Learn and apply sensory science methodologies to understand consumer preferences and optimise product formulation
Scale-Up at Pilot Scale
- Support the scale-up of dairy product formulations from lab-scale to pilot-scale production
- Assist in designing and conducting pilot-scale trials, including process optimisation and troubleshooting
- Collect and analyse data to ensure consistency between lab-scale and pilot-scale production
Research and Documentation
- Stay abreast of the latest developments and trends in Dairy Science, food formulation technologies, and sensory evaluation methods
- Contribute to research projects related to dairy product formulation, process optimisation, and sensory analysis
- Prepare reports, presentations, and documentation of experimental procedures and results
Cross-Functional Collaboration
- Collaborate with cross-functional, scientific and commercial teams
- Participate in team meetings to discuss project progress, challenges, and potential solutions
- Learn from and contribute to a dynamic team environment focused on innovation and excellence in dairy Product Development
Skills & Experience
- A background in Chemistry or Food Science (with a Bachelors or Masters degree)
- Practical experience in a food lab setting (e.g. experience with analytical equipment, several raw materials and ingredients) is highly advantageous but not essential
- A curious yet methodical mind with the ability to follow complex instructions effectively and with a high attention to detail
- An eagerness to learn and get stuck in at all levels with no job too big of too little
- The ability to communicate effectively both verbally and in writing
- A passion for all things food as well as sustainability
