If you are the sort of chef who enjoys working with local fishermen to source seafood right off the coastline in front of your eyes, buying herbs veggies and edible flowers from the 'Raasay Walled Garden' outside your kitchen door or building relationships with the local crofters to get the best wild venison from your doorstep then Raasay is your ingredient heaven.
Who and what are we?
Raasay House is a 21 bedroom hotel with a restaurant, bistro, bar and an outdoor centre located in a Georgian style mansion house on a picturesque inner Hebridean island. We are a family run business and have been operating in a community-owned building for over 35 years.
We bring together quality accommodation, fantastic food/drink as well as a deep love of our breath-taking surroundings all underpinned with a genuinely warm and authentic customer experience.

What food services do we provide and who do we serve?
Throughout the day we serve breakfast, lunch and dinner menus to a variety of guests ranging from those at Raasay House to the various B&Bs, Raasay Distillery (which has six bedrooms), local residents, day visitors and holiday home guests depending on the serving period.
Evening service across three dining rooms and the bar can reach 130 covers during the peak times of the year (Easter and June, July & August).
Daytime service reaches around 50 covers in the summer and Easter holidays when the outdoor area is maximised.
Our breakfast service for our residents consists of both continental and cooked options and in peak season reaches 50-70 covers depending on occupancy configuration. - Other than a takeaway/outdoor eatery we are the only place on the island to eat. We may be the only place but that doesn't mean we let standards slip or become complacent.
During April, September and October (and other odd times) we have groups such as musicians, yoga groups and photographers (groups are usually between 12 and 25) or Weddings (50-100 guests). These are usually staying on a dinner bed and breakfast or full board basis. We would usually require set menus prepared and tailored to the groups in advance as larger groups will pre-order meals.
What is our food like?
Our customers like traditional Scottish food with a modern twist. They love local seafood, fresh local produce and plenty of vegetarian and vegan options.
What do we expect from you?
That you will keep maintaining the highest levels of cleanliness utilising your team and cleaning schedules to meet this standard.
That you will keep good records of temperatures and cleaning to meet the standards laid out by "Food Standards Scotland".
That you will take the lead on the conception and delivery of all menus.
That you will prepare and serve food that will retain and expand on our good reputation for dining.
That you will try to use local ingredients as much as possible.
That you will be a good leader and communicator, fostering a culture of learning, support and great communication within your team and between your team and the departments working with them.
That you will work to staffing and GP targets and participate in fortnightly management team meetings.
You will work with the MD to agree on kitchen rotas.
That you manage stock levels, rotation and ordering.
You will show a desire and ability to develop the department and its offering to deliver an exceptional experience to all of our guests.
You will understand the personal attributes that you as a leader must have to lead the department and thrive within the role.
You will be able to demonstrate that you have a the right to work in the UK
PACKAGE:
£30,000 to £35,000 according to experience per annum, paid monthly plus a share of tips.
