Chef De Partie @ The Waiting Room, Morningside
The position of Chef de Partie has arisen to join the team at the Waiting Room due to the addition of new menus and a new brunch offering which is soon to be launched.
Positioned in the affluent area of Morningside the job is in an excellent location for those living in city centre or surrounding areas, as well as being easily accessible for those commuting.
Our Kitchen has a menu ranging from street food style bites & pub classics.
The main duties of the role are
- Preparation of food for every service to ensure dishes are prepared in a safe, compliant & timely manner
- Working within the team to train junior members of the Brigade
- Assisting the Head Chef with filling in food safety record keeping
- Assisting the Head Chef with Specials & Menu writing
- Monitoring and recording of wastage as well as coming up with ideas to keep it to a minimum
- Assisting the Head Chef & Sous Chef's to maintain good stock rotation and exemplary kitchen cleanliness
Experience of at least 2 years as a Chef de Partie in a similar standard of Bistro/Brasserie/ Gastropub would be desireable for this role and there is plenty of potential to develop within the growing company if the applicant shows the desire and commitment to progress.

As well as having a professional experience in
- Butchery & Cookery of Meat
- Fish preparation skills including filleting of fish & opening & cleaning of shellfish
- Ability to make stocks & sauces from scratch
- preparation of vegetables & garnishes to a high standard
- Cooking safely to a high standard both for customer satisfaction and food safety
Rehis Elementary Food Hygeine or equivalent is also desirable but not essential as we believe in training and developing our employees and showing them the same commitment and respect to their careers that they show to us.
