Job Title: Purchasing Manager
Salary: £45,000 to £50,000 dependent on experience
Holiday: 28 days holiday inclusive of bank holidays

Job Summary
Pepe’s Piri Piri (Pepe’s) is the leading Piri Piri chicken franchise in the UK with over 180 franchised stores nationwide.
The Purchasing Manager is an important position within Pepe’s ever growing Head Office team.
Working directly with the Head of Franchising and the Franchise Operations Manager, the Purchasing Manager will be responsible for the supply chain of products from manufacturers to stores through Pepe’s Approved Supplier network. They will also be responsible for the implementation of all changes in legislation that affect both for the supply chain and sale of products, as well as ongoing food compliance, including allergen and nutritional information, in our franchised stores. Analysis of store purchasing and operational practices to identify opportunities for improvements and efficiencies along with keeping all store Food Manual and Guides up to date.
Responsibilities to Include:
· Supply and distribution
o Take orders from Pepe’s Approved Suppliers and place these with the manufacturer
o Ensure Approved Suppliers maintain minimum stock levels to ensure products are always available for our stores
o Ensure Approved Suppliers only supply approved ingredients to stores Build a strong working relationship with Pepe’s Approved Suppliers including regularly monthly review meetings and annual site visits
o Create monthly purchasing reports
o Source new ingredients for Limited Edition promotions
o Quarterly review of all approved products to ensure no changes to allergen or nutritional information
· Compliance and Operations
o Assist Area Managers with ensuring there is compliance with Pepe’s food related systems, processes, policies and all Food Safety and Health Safety requirements across stores
o Monitor store purchasing patterns
o Ensure stores only use approved products and ingredients
o Maintain and update the Pepe’s Approved Ingredients list for stores and Approved Suppliers
o Liaise with Environmental Health and Local Authorities on all food aspects
· Commercial Analysis
o Analyse franchisee sales stock purchasing and providing accurate and informative insight to
o patterns to determine compliance with approved ordering practices and communicate issues to Area Managers
o Assist in preparation of key management information and reports
o Identify opportunities to improve Pepe’s food supply chain and work with Pepe’s senior management team on new food projects
· Keep all Pepe’s printed and online operational materials up to date
o Update and maintain all Food related Best Practice Factsheets, and Food Menus, ensuring all relevant material is updated in line with legislation and best practice
o Ensure Pepe’s store Intranet content is up to date, with any operational or food supply Memos, allergen and nutritional information
o Ensure Pepe’s Website is kept up to date with correct customer allergen and nutritional information
· Team Cover
o General support as required to the Head Office Operational Team as required, which may include to cover annual leave, sickness and any other absence.
· Ad Hoc Requirements from Head of Franchising and the Franchise Operations Manager.
