The CDP job description:
Reporting directly to: Head Chef
Also reports to: Directors, General Manager, Sous Chef/Senior CDP
Summary:
The Chef de Partie ensures each menu item from their station(s) is prepared on time and meet the presentation style and quality expected of Maison Bleue. They also ensure that health and food safety standards are practiced and help troubleshoot any kitchen issues that may arise. The role is integral to the customer experience and the overall efficiency of the kitchen operation.
Typically responsible for:
- Mise-en-place preparation and freshness
- Ensuring all stock is kept under optimum conditions
- All food is prepared according to the quality and standards of Maison Bleue
- Safe operations and cleanliness of all kitchen and food storage areas
- Contributing to creating a harmonious environment amongst all staff within the restaurant
Main activities:
- Prepare and cook high quality food according to specifications
- Ensure all meals are the correct portion size, temperature, and presentation (plate size, garnish etc)
- Ensuring all mise-en-place is freshly prepared and on time
- Assist the Head Chef in providing training and guidance for junior chefs
- Receive, record and account for supplies and deliveries in accordance with house rules
- Safe storage of food
- Assist with regular stock takes where required
- Maintain cost control systems where activities fall under your area of responsibility
- Follow correct hygiene and food safety procedures at all times
- Contribute to regular deep cleaning of the kitchen and food storage areas
- Follow the regular cleaning and waste disposal practices as outlined in the house rules
- Optimise the use of resources: food, energy, labour, water, and reduce waste
- Use safe work practices at all times and report and concerns to the Head Chef or General Manager
- Be fully aware of the business’s Fire Safety Procedures and House Rules
- Take part in regular team meetings as scheduled by the Head Chef
- Attend training courses relevant to the position where required by the business
- Carry out any other duties within reason as directed by the Head Chef

Education/experience
Formal training is always preferrable but by no means a necessity where the designated person has relevant experience, as ongoing training is provided.
Must be prepared to gain further food knowledge and aspire to expand your skills.
Must have a working knowledge of food safety and hygiene requirements.
