  • 35,000 per annum

Overall, Purpose of the Role

This role profile is a guide to the work you will initially be required to undertake. Overall, Purpose of the Role

To develop, lead and manage a motivated team with the appropriate skills to deliver exceptional service to our clients and guests. Working closely with the Production Head Chef and deputising in their absence to deliver best in class culinary experiences to all our guests throughout the venue. All whilst maintaining a key focus on HSE, food safety, our people and our budget.

Key Accountabilities

Health and Safety

  • Taking reasonable care for your own health and safety and that of others who may be affected by what you do or what they fail to do.
  • Complete all relevant online training through the learning portal.
  • Complete Level 3 HSE e-learning courses as appropriate within 26 weeks of commencing employment.
  • Implement all relevant HSE procedures within the unit and review them as appropriate.
  • Ensure that all HSE incidents are correctly reported and investigated with relevant reviews of work procedures.
  • Ensure that all appropriate HSE information, instruction, training and supervision is provided to all employees within your control to enable them to carry out their work safely and effectively.
  • Report HSE issues beyond your control to your line manager.
  • Ensure that all food preparation is carried out in accordance with food hygiene procedures.
  • Maintain high levels of food safety throughout your working environment at all times.
  • Ensure that all food safety risk assessments are adhered too, implement and review regularly, the company food safety management system and effective HACCP controls, at identified critical points and throughout the food handling process.
  • Keep suitable records of all food production, storage, delivery and cooling up to date and filed appropriately as required by Compass Group policy.

Financial

  • Support in managing variable labour in line with budgeted guidelines.
  • Work closely with head chef and Levy management to minimise any unnecessary costs.
  • Ensure menus are costed and in line with budget.
  • Complete weekly stocktakes and invoice recording, in line with company policy.
  • Ensure food is produced in line with budgeted COS%.
  • Minimise stock holding to business needs.

Culinary Operations

  • Work in collaboration with all Culinary areas to deliver excellent food.
  • Overseeing the preparation, cooking and service arrangements, taking responsibility for the smooth and efficient running of the Production kitchen day to day.
  • Supervise the preparation and cooking of all food produced on site ensuring standards are maintained.
  • Schedule and coordinate work to ensure that food preparation is delivered in a timely fashion and to the highest standards.
  • Ensure all food is prepared to required standards checking for taste, presentation and quality.
  • Ensure compliant purchase of products and other necessary food supplies working within the agreed budget.
  • Ensure that high standards of cleanliness and safety are always maintained throughout all areas of the kitchen.
  • Maintain controls to minimise food waste.
  • Attend catering planning meetings as required (e.g., Function Sheet Meeting)
  • Assist in the planning of menus as required ensuring menus meet highest possible standards and remain in line with budgeted costs.

  • Work with venue Head chef to ensure that Levy UK culinary core signature is always followed.
