Chef de Cuisine

Location: Palm Beach, Florida

Salary: $120-$140k + Bonus 

I am working with a well- established Restaurant group who pride themselves on service and cuisine.
Do you want the opportunity to work with a world leader in the culinary profession? They are looking for a Chef de Cuisine to be a part of their new concept opening in Palm Beach Florida!

The Chef de Cuisine:   

• Overseeing all culinary operations: kitchen staff recruiting and training, motivating team members, preparing food, evaluating product quality, and cooking 
• Writingand developing of menus 
• Budgeting and financial planning of labour and food cost 
• Participating in business development and overall guest experienceby interacting with guests to deliver outstanding service 
• Overseeingand scheduling inventory 
• Achieving and maintaining Department of Public Health standards and regulations 
• Demonstrating passion for quality food  
• Assuming responsibility for the Executive Chef in their absence 

Minimum Requirements: 

• Extensive Michelin experience (ideally 3-5 years in management)
• Ideally at least 2 years min as CDC at 1
  * minimum. 
• Classically trained but not essential.
• Previously being part of a new restaurant opening would be beneficial but not essential. 
• Will be involved with other CDC’s and Directors to continuously develop future menus. 
• Forecasted $15-20m revenue. 
• Approx team of 30 Chefs. 
• Proficient with all MS Office Applications.
• Full Accountability for P&L.
